The star of the season, it seduces with its melt-in-the-mouth, slightly sweet flesh and its ability to pair equally well with warm spices and fresh herbs. Now is the perfect time to cook with it, as it is not only delicious, but also rich in fibre, beta-carotene and essential vitamins to help us face the cooler months.
In this recipe, butternut squash is prepared in a slightly different way: roasted in small cubes and then added to seasonal grated potato patties. A simple, nutritious and perfectly balanced combination that allows you to enjoy its full flavour while adding texture and indulgence. The dish is accompanied by a fresh yoghurt sauce, a few pieces of grilled bacon and a touch of feta cheese to enhance the whole without making it too heavy.

Butternut squash and potato patties with yoghurt sauce, crispy bacon and feta cheese
Ingredients (serves 2)
250 g butternut squash, cut into small cubes
2 potatoes, grated and well drained
1 egg
1 tablespoon oat flour
Smoked paprika, salt, pepper, herbs of your choice
150 g Greek yoghurt
1 teaspoon lemon juice
1 teaspoon olive oil
2 slices of bacon, grilled and crumbled
Crumbled feta cheese & microgreens
Preparation
Cook the butternut squash in a frying pan or in the oven until tender.
Mix together: butternut squash, grated potatoes, egg, flour, spices.
Form patties and bake for 20–25 minutes in the oven at 200°C (or 5 minutes per side in a frying pan).
Prepare the sauce: yoghurt, lemon, olive oil, salt, pepper.
Plate up: yoghurt sauce on the plate, golden patties, crispy bacon, feta cheese and fresh sprouts.
Ready to serve — simple, healthy, fragrant, and perfect for showcasing seasonal butternut squash.
